Lunch Course

Menu	Appetizer: Red snow crab wrapped in phyllo pastry / Petit poa mousse with salted caramel clotted cream and nuts / Shrimp escabeche Soup: Parisienne soup with Parmesan-flavored grissini Main course: Beef fillet steak with broad bean fritters and vintage Madeira wine sauce. Dessert: White peach concentrate with vanilla parfait and lychee sorbet. Petit fours: Chocolate ganache and diplomat swan.

Naoki Mori	A Ronnefeldt-certified Tea Master Gold, she joined the Japanese general agent for Ronnefeldt tea after working for a restaurant planning company and other businesses. In 2004, she became a Ronnefeldt-certified Tea Master. While involved in tea training and menu development for hotels, restaurants, and cafes, she also works as a tea seminar instructor at hotels and cafes throughout Japan. She also teaches tea courses at vocational schools such as cafe schools.
