CONCEPT

Ingredients from the "Land of Food." We deliver the delicious moments of each of the seafood such as abalone and spiny lobster, the local produce such as Matsusaka beef and Iga beef, and the mountain produce such as log-grown mushrooms and freshly picked vegetables, all served on a teppanyaki grill. A work of art in meat, Mie's proud brand of beef, "Matsusaka beef," is so tender that it melts in your mouth, with a rich, sweet fat that spreads throughout your mouth. After graduating from Kyoto Culinary College in 1993, he trained at hotels in Kyoto, Nara, and Shiga, and became head chef of Shima Kanko Hotel Teppanyaki Yamabuki in 2020. Making use of his extensive on-site experience, he serves teppanyaki dishes that allow guests to enjoy conversation with him at the counter and a sense of realism. His style of offering surprises and new appeal while adhering to traditional techniques that make the most of the quality of the ingredients is one of the new food attractions of Shima Kanko Hotel.
