This sake is made in collaboration with Kawatake Brewery, located in Taki-cho, Taki-gun, and was founded in 1857 (Ansei 4), and is made using 100% Taki-grown Yuminariho sake rice.
When served chilled, it has a delicate and refreshing taste, but when served warm (around 40 degrees), it offers a rich range of flavors that bring out the soft umami of the rice.

About our original sake "Shima"
Shima Kanko Hotel has been promoting the appeal of Mie's cuisine by using ingredients grown in the prefecture's rich natural environment and building relationships with many producers. Since Mie's sake was certified as a geographical indication (GI), in 2021, we have been working with sake breweries in the prefecture to create original sake that uses Mie's water, sake rice, and yeast.
This is the fifth installment.
About Kawabu Brewery
With the desire to "allow people all over the world to drink beautiful sake," Kawatake Brewery continues to hone its techniques in order to create sake that is in harmony with the beauty and lifestyles of people. In addition to "Hokosugi," Kawatake Brewery's signature sake, "SHIKI" won a gold medal at the 2024 National New Sake Tasting Competition, and is a representative sake brewery in Mie Prefecture that has won numerous awards.

Part 5: The brewing of the Japanese sake "Shima"
The sake "Shima" brewed by Kawatake Brewery is made with high-quality water, sake rice, and yeast. The brewing water is pumped up from underground from the Miyagawa River system, and is born from the water and earth of Taki, and the rare "Yugataho".
The yeast that determines the taste is "B33," developed by Hidehiko Kawai, the eighth-generation president of Kawatake Brewery, which brings out the richness, aroma, and full-bodied taste of the sake. Using the traditions and techniques of sake brewing that have been passed down for many years, we have created a sake unique to this region, "Shima."

Currently, ten local rice farmers from the Shihikida Agricultural Association are involved in the production.

We feel that Kawatake Brewery's original yeast, "B33," effectively brings out the powerful flavor that is unique to native varieties.
The fruity flavor of the sake when served chilled makes it delicious with sashimi and fish appetizers, and by changing the temperature, it can be made to taste just as good as Matsusaka beef and tempura.
This is a sake that can only be found in Ise-Shima, known as the land of food.

After joining Shima Kanko Hotel in 2009, he was the manager of the hotel's two French restaurants. After gaining experience at the 2016 G7 Ise-Shima Summit and the 2023 G7 Mie- Ise-Shima Transport Ministers' Meeting, he will become head of restaurant service at the hotel in 2024.
A design inspired by sake brewed in Ise-Shima
The Japanese sake "Shima" is sold with a different package design for each brewery every year. This time, the "mountains" of Taki, where the sake brewery is located, and the "sea" of Shima are combined. This represents Shima, known as the land of food at the foot of Ise Grand Shrine, and the sake brewed in the land that has a deep connection to Ise.
