This Junmai Daiginjo sake is brewed with the soft, clear groundwater of the Suzuka Mountains. It boasts a gorgeous ginjo aroma and the rich, full-bodied flavor characteristic of Yamada Nishiki rice. Its mellow and delicate character makes it a versatile pairing for a wide range of dishes.

Shima, a sake brand that changes its packaging design every year depending on the brewery, creates labels and packaging designs that reflect the image of the brewery. This year, the design is based on the patterns of Ise-katagami (Ise stencil paper) and features a snow pattern that alludes to Miyano Yuki, the brewery's signature sake.

Miyazaki Honten

Founded in the late Edo period, this sake brewery continues to produce sake in a region blessed with the pure groundwater of the Suzuka Mountains. They are committed to quality, meticulously managing koji production and fermentation, and while upholding tradition, they also pursue sake brewing that is in line with the times through technological innovation.
As a sincere brewery that walks hand in hand with the local community, we have produced many renowned sake brands, including "Miya no Yuki."

Steamed clams from Mie Prefecture, served with grilled risotto and winter vegetables.

This dish combines steamed clams from Mie Prefecture, prepared in sake, with a vegetable soup and baked risotto.
The gentle broth, made with plenty of vegetables such as napa cabbage, daikon radish, shiitake mushrooms, and burdock root, is infused with the umami of clams, creating a flavor that harmonizes beautifully with the richness of "Shima" sake. We recommend enjoying it at room temperature.

Shima Kanko Hotel has been promoting the appeal of food while cherishing its connections with local producers and ingredients from Mie Prefecture.
In 2021, when sake from Mie Prefecture received geographical indication (GI) certification, we began planning original sake in collaboration with local breweries, focusing on "Mie's water, sake rice, the skills of the brewers, and the local climate and culture."

This series has collaborated with leading sake breweries in Mie Prefecture, including Ota Shuzo, Shimizu Seizaburo Shoten, Wakaebisu Shuzo, Takijiman Shuzo, and Kawabu Jozo. For its sixth installment, this Junmai Daiginjo is brewed in collaboration with Miyazaki Honten in Yokkaichi.
