July-September Hokkaido Buffet, Part 2: Savor the Bounty of the Northern Land Sky Restaurant Étoile
For the second installment of our Hokkaido Buffet, we will be offering a menu featuring Hokkaido-produced ingredients, including flan made with Hokkaido corn, pilaf made with Hokkaido-produced "Tokachi Mash®" and Hokkaido-produced autumn salmon, potato gratin made with snow-aged sweet May Queen potatoes from "Tokachi Inoue Farm" in Hokkaido, and butter-soy sauce stir-fried scallops from Hokkaido. We will also be offering a variety of desserts made with plenty of Hokkaido ingredients, so you can enjoy the flavors of Hokkaido until the very end of your meal.
For dinner, we offer a tasting of "Hanasaki crab from Hokkaido" and "Maruzuwai crab." This is a dinner-only experience where you can enjoy the differences in flavor and texture of each type of crab.

Thanks to the exceptional skills and creative ideas of our chefs, the charm of Hokkaido-produced ingredients, imbued with the love and heartfelt dedication of the producers, is further enhanced, resulting in exquisite dishes that can only be tasted here.

It was a valuable opportunity to hear directly from the producers about the thoughts and dedication they put into their ingredients, and to experience the charm of ingredients nurtured in a rich natural environment and their commitment to meticulous craftsmanship.

Hokkaido-grown Hanasaki crab is characterized by its rich flavor and firm texture. Its vibrant red shell and the sweetness that unfolds with every bite make it a truly unique Hokkaido delicacy.
The snow crab, known for its concentrated umami flavor, has a brownish shell with dark spots. It boasts a delicate and refined sweetness and a melt-in-your-mouth tenderness. It doesn't shrink much when heated, and can be enjoyed even when boiled.

The gentle, natural flavor of milk, along with its rich, mellow taste, fills your mouth.
Crème brûlée made with "Kometsuya" white eggs from Takeuchi Poultry Farm in Otofuke Town, Hokkaido.
The rich flavor of the eggs and the bitterness of the caramel complement each other perfectly, making this a popular dessert for both adults and children.
Another distinctive feature is that it is baked to a white color by using "Kometsuya" flour.

This baked confection incorporates corn into the dough, is topped with corn cream, and finished with a corn butter cream that mimics the texture of corn kernels.
