We offer a pairing of sake from Tamura Sake Brewery, a long-established brewery founded in 1822, with a course menu created by our head chef.
This course offers pairings that complement each dish, from appetizers to main courses and desserts, highlighting the unique characteristics of each wine.
On the day of the event, we will welcome the brewers themselves, offering a special opportunity to experience the profound charm of Japanese sake while learning about the brewers' passion and the background of sake making. Enjoy a once-in-a-lifetime harmony of cuisine and fine sake in the tranquil setting of Shirokane.

This course utilizes the diverse range of sake offered by Tamura Brewery, proposing pairings that complement each dish, from appetizers to main courses and desserts.
For the toast, we offer Junmai Ginjo "Honmaguro." Its elegant aroma and light mouthfeel will grace the start of the course. For the following "Scallops and Tuna with Shiokara Dressing," we pair it with a special summer Junmai sake, extending the aftertaste with a refreshing acidity. For "Hairy Crab and Jade Eggplant in Broth," we pair it with the special Honjozo "Maboroshi no Sake," adding depth to its rich flavor. For "Swordfish Wrapped in Shiso Leaf and Plum Paste," we offer Junmai Daiginjo "Gin no Mai," creating a light flavor along with the "Shirokane Salad." For the main course, "Kitauchi Yamaguchi Farm Black Wagyu Beef Loin," we pair it with Daiginjo "Taiou," allowing you to enjoy the rich umami and the layered, high-quality aftertaste. To conclude, we offer a sake dessert with special Junmai "Tokyo Wajo," gently bringing the course to a close.

The head of Tamura Sake Brewery. He succeeded to the 16th generation in 2008, and the brewery celebrated its 200th anniversary in 2022. While inheriting the philosophy cultivated by generations, he works to improve the sake brewing of all brands, and pursues sake brewing that is unique to Tamura Sake Brewery, in line with the Tamura family's spirit of "pioneering."

Tamura Sake Brewery

Tamura Sake Brewery, located in Fussa City, Tokyo, is a long-established sake brewery with a history dating back to 1822. Known for its flagship brand "Kasen," it has a distinguished history as the head brewery that oversaw sake breweries throughout the Kanto region under the store brewery system that continued until the Meiji era. Using the moderately hard groundwater of Chichibu and Okutama as brewing water, and upholding the family motto "Make carefully, sell carefully," they continue to brew sake that harmonizes with food. The sake's quality, which combines a delicate aroma, refined umami, and a clean finish, complements a wide range of dishes, from the rich flavors of seafood to the depths of meat dishes, enhancing the taste of each dish.

Chef: Yoshinaga Akiyama

He is the head chef of Teppanyaki Shirokane at the Sheraton Miyako Hotel Tokyo . He honed his skills at three-Michelin-starred, one-Michelin-starred, and Bib Gourmand restaurants in France, and contributed to the restaurant's acquisition of two Michelin stars as second chef at Cuisine[s] Michel Troisgros. Currently, he is immersed in the world of teppanyaki, offering dishes that incorporate diverse culinary cultures, centered on French and Japanese influences.
