Dominique Bouchet
I was born in the Poitou-Charentes region of France and grew up surrounded by the abundant natural resources of the area.
After serving as head chef at prestigious Parisian restaurants such as Tour d'Argent and Hôtel de Crillon, he opened his own restaurant, Dominique Bouchet, in the 8th arrondissement of Paris in 2004. Currently, in addition to Kyoto, he offers gastronomic French cuisine, featuring his signature light yet flavorful sauces, at two restaurants in Tokyo's Ginza district: Dominique Bouchet Tokyo and Bistro Les Copains Dominique Bouchet.

We are very pleased to announce the opening of Dominique Bouchet Kyoto at The Westin Miyako Kyoto .
I am grateful for my long-standing relationship with Japan, and pay homage to Kyoto, a city surrounded by Japan's profound cultural heritage and the beautiful nature of the four seasons. I hope that many people will enjoy the essence of French cuisine that I have inherited, along with the "light and flavorful sauces" that I particularly value.
