Along with high-end French cuisine overseen by Dominique Bouchet, our sommelier will suggest the wine that best suits your meal from a selection of approximately 300 types. In addition, champagne for the aperitif and cheese and bread after the meal will be carefully served from each trolley.

PROFILE

I was born in the Poitou-Charentes region of France and grew up surrounded by the bountiful ingredients of nature.
After serving as executive chef at renowned Parisian restaurants such as "Tour d'Argent" and "Hotel de Crillon," he went independent in 2004 and opened his own restaurant, "Dominique Bouchet," in the 8th arrondissement of Paris. Currently, he serves gastronomic French cuisine with the light and flavorful sauces that are the essence of Dominique at two locations: "Dominique Bouchet Tokyo" in Ginza, Tokyo, and the bistro "Les Copains Dominique Bouchet" in addition to Kyoto.

We are delighted to announce the opening of Dominique Bouchet Kyoto at The Westin Miyako Kyoto.
I am grateful for my long-standing relationship with Japan and pay tribute to Kyoto, a city surrounded by Japan's deep cultural heritage and the beautiful nature of the four seasons. I would like many people to enjoy the essence of French cuisine that I have inherited, along with my particularly cherished "light and flavorful sauces."
