Tarte Le Lectier

This pear tart is made with a generous amount of Niigata Prefecture's winter gem, the Le Lectier. Le Lectier is the highest quality pear variety representing Niigata Prefecture, and is also known as the "Lady of Pears" for its mellow aroma, elegant sweetness, and smooth texture. It's a rare fruit, with only the finest selections available on the market. A whole Le Lectier is luxuriously placed in the center of the tart, surrounded by beautiful slices. The richly fragrant Chantilly cream enhances the flavor of the pear, while chocolate scramble and groseille add a touch of elegance. The base is layered with diplomat cream, crème d'amandes, and crispy sucre pastry, enhancing the elegant yet smooth flavor of the Le Lectier.

A beautifully stacked strawberry tree in the center is surrounded by ribbon-like chocolates, creating an adorable presentation reminiscent of a gift box. The top is decorated with snowflake-shaped chocolates and blueberries, representing the Christmas night sky. The sponge cake is generously filled with strawberries and strawberry syrup, as well as the hotel's signature not-too-sweet, smooth fresh cream, creating an exquisite balance with the fluffy genoise pastry. The sweet and sour taste of the strawberries spreads with each bite, harmonizing in your mouth with the gentle richness of the cream. Combining beautiful appearance with rich flavor, this is a special dish that will truly decorate your Christmas table.

This luxurious take on the traditional French Christmas treat, "Buche de Noël," is crafted with high-quality chocolate. The center features a soft, 55% cocoa chocolate cream, surrounded by a rich 66% cocoa ganache. The layers of different cocoa flavors intertwine, and the tart raspberry jam enhances the richness of the chocolate, adding a refreshing touch to what can often be a heavy treat. The moist chocolate sponge cake ties the whole cake together for a smooth, mellow texture. The chocolate parts, which resemble tree bark, are adorned with gold leaf, creating a luxurious and beautiful atmosphere befitting a Christmas evening.
